DIY mango chutney toastie

The Jackson Pollock among sandwiches (that’s that guy who threw pots of paint so wonderfully). I mean, the smokiness of the Smoky + the palette of fresh and tangy flavors of the DIY chutney we top it with. Dynamite. 🀀

Ingredients:
8 slices of sourdough bread
4 slices of WildWestLand Melt Me Smoky
Plantbased butter
Oil for frying, e.g. olive oil
1 onion, chopped
1 clove of garlic, chopped
1 large ripe mango, peeled and diced
1 red pepper, chopped
2 tbsp white wine vinegar
2 tbsp sugar
2 cm ginger, peeled and grated

Preparation:
πŸ‘‰ Heat a tablespoon of oil in a pan and fry the onion, garlic and red pepper in it.
πŸ‘‰ Add the ginger, mango, white wine vinegar and sugar and stir well. Simmer gently on very low heat for about 20 minutes. Keep stirring occasionally.
πŸ‘‰ Spoon the chutney into a squeaky clean jar and let cool – you can save the leftovers if your jar is clean.
πŸ‘‰ Spread 4 slices of bread liberally with plantbased butter, place a slice of Melt Me Smoky on top and spoon a spoonful of mango chutney on top.
πŸ‘‰ Place the remaining 4 slices of bread on top and heat plenty of oil in a frying pan. In this, fry the sandwiches alternately until golden brown and the Melt Me Smoky has melted.
πŸ‘‰ Cut the sandwiches in half diagonally and serve with a little extra of that legendary chutney of yours for dipping.
